Does it connect to French banks?

No, and deliberately so. Without an aggregator, Crédit Agricole, BNP Paribas, Société Générale, Boursorama and every other bank work identically — you log spending rather than import it, and nothing expires or needs reauthorising.

Is the app available in French?

Yes. French is among the 33 translated languages and is chosen separately from currency, so a French interface with euro amounts is a normal setup.

Can I track in euro?

Yes — EUR is selectable during onboarding and in Settings later, and totals, charts and exports all use it. Every ISO currency is supported for travel or foreign income.
